Saturday Lunch - Katsu Chicken Curry

My favourite ever dish when I visit Wagamama is their katsu chicken so I decided to try and make my own. Using this recipe from the Independent I made the curry sauce and the breaded chicken and must admit it was delicious, slightly sweet and definitely crunchy. I think having the panko breadcrumbs that they use in Japan helped to make the chicken extra crunchy.....


I didn't make the chicken exactly as the recipe stated - I had some chicken strips and breaded them all instead of covering an entire chicken breast and then slicing it after cooking.
